Carrot Cake Oatmeal

Ingredients

  • 2 cups steel cut oats
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups shredded carrots
  • 1 teaspoon fresh ginger, grated
  • 2 teaspoons cinnamon
  • ¼ cup raisins
  • ½ cup walnuts, chopped
  • 8 cups nut milk or dairy if tolerated
  • 1 ½ teaspoons vanilla extract
  • ¼ cup maple syrup or honey

Method

  1. Combine all ingredients in the slow cooker.
  2. Cover and cook on low for 5 hours or high for 2-3 hours.
  3. Divide into individual portions and store refrigerated for 1 week.
