Ingredients
- 2 cups steel cut oats
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cups shredded carrots
- 1 teaspoon fresh ginger, grated
- 2 teaspoons cinnamon
- ¼ cup raisins
- ½ cup walnuts, chopped
- 8 cups nut milk or dairy if tolerated
- 1 ½ teaspoons vanilla extract
- ¼ cup maple syrup or honey
Method
- Combine all ingredients in the slow cooker.
- Cover and cook on low for 5 hours or high for 2-3 hours.
- Divide into individual portions and store refrigerated for 1 week.
