Smoky pulled pork … grilled pineapple … sriracha aioli. Trucks almost never smell this good. But Madame BBQ isn’t a typical truck. Instead, it’s a woman-helmed mobile eatery that’s been bringing rich, meaty offerings to hungry Howard Countians since 2014. “I started it as an expansion of my culinary instruction business, but I enjoyed it so much that I took it to the streets,” says owner Nikki McGowan. Currently locking horns with the county over its restrictive food truck laws, McGowan hopes the rules will eventually loosen so she and other rolling restaurateurs can cast a wider net. Until then, follow your nose to Gateway Drive in Columbia on weekdays and Locust Point in Baltimore on Fridays to score a seriously succulent lunch. Just don’t expect to find dishes honoring guys, with one exception. “I did name a sandwich after my husband just to throw him a bone in thanks for all of his help with the truck,” says McGowan. “To my surprise, ‘the Todd’ became a favorite.
